CHEESE CAKE RECIPE

BASE

150 GMS OF LSA, OR A COMBINATION OF ANY DRY NUTS YOU FANCY, MIXED WITH SOME FLAX SEEDS; I HAVE USED ALMOND MEAL, and HAZELNUT MEAL WITH A LITTLE WALNUT MEAL. WALNUT MEAL IS GENERALLY MOIST THOUGH

50-80 GMS OF MELTED BUTTER


MIX TOGETHER. BAKE IN MODERATE OVEN FOR APPROXIMATELY 20-30 MINS,
COOL, this will depend on your oven, mine is crappy ;)

FILLING.

250 GMS LOW FAT COTTAGE CHEESE

125 GMS 80% LOW FAT CREAM CHEESE

125 GMS 70% LOW FAT SOUR CREAM

I LEMON BLENDED, OR 2 TEASPOONS ZEST AND 2 TABLESPOONS JUICE

(I like it lemony, hence the whole lemon)

2 TABLESPOON CORN FLOUR

1/3- 1/2 CUP XYLITOL, OR SWEETENER EQUIVALENT.

Blend all ingredients together. Pour into microwavable dish, Microwave on medium for approximately 10 minutes, whisking well every 1 minute until very think. Pour onto base and refrigerate for about 3 hours. IT IS yummy BE WARNED!!

CAN SPRINKLE TOP WITH NUTMEG OR CINNAMON, OR BOTH

I will get around to working out the macro nutrients, You can use a combination of ricotta and low fat cottage cheese if you want it lower in fat. Sorry it isn't specific, I made it up and had to remember from memory as at the time I didn't take enough notice of quantities, I made it at 11pm the night before comp when I couldn't sleep ;)
